A cover crop is a plant that is used to slow erosion, improve soil health, enhance water availability, smother weeds, and help control pests and diseases. Winter rye is used as a winter cover crop because it's extremely cold tolerant, easy to grow, very tolerant of poor soil conditions, drought resistant and easy to till under. Winter rye is the most winter hardy and earliest maturing cereal grain. Rye competes well with weeds, and herbicides are generally not needed.
